Turkey Burgers

I have been cooking a lot lately and I have been wanting to post some of my favorite dishes. Here is a healthy and fast recipe that will have you full and satisfied. The recipe comes from "Deliciously Deceptive" by Jessica Seinfeld (I love this cookbook!).

Turkey Burgers
1 pd lean ground turkey
1/2 pd. mushroom (I use button mushrooms and a 1/2 pd is about one small cartoon)
1 cup whole wheat or Italian breadcrumbs
1/4 cup finely chopped zucchini (about half of a zucchini)
1 tablespoon Worcestershire sauce
2 tablespoons Ketchup
1/2 tea. salt
1/4 tea. pepper
1 tablespoon Olive oil

Heat oven to 400 F

First chop up zucchini and mushrooms in food processor. Add to a large bowl. Then add Turkey, breadcrumbs, Worcestershire, ketchup, salt and pepper. Combine and make about 8-9 patties.

Heat large oven safe skillet on medium high and coat with cooking spray. Add oil when hot. Add patties and brown on one side about 4-5 minutes. Flip and put skillet in oven and cook for another 4-5 minutes or until they are no longer pink. Use whole wheat buns and top with all your favorite fixings (I especially love adding guacamole to mine). Enjoy!

We were taking pictures after Jack's bath the other day because his hair looked so funny but we were cracking up at the faces he was giving us. I so wish I could jump inside this kids head just for a day!

The Big Apple

It's been a week since we returned from our trip to New York and so I thought it was time to post some pictures. We had so much fun! We missed Jack terribly but enjoyed some much needed "grown up time"! The only thing I can think about since I came home is when I get to go back! I loved it!

Time Square/Broadway

We were able to see one show called "Spring Awaking". I was so amazed at the talent. I have been to several off Broadway shows in SLC and L.A. but nothing compared to the real deal...AMAZING!!! I wish we could have seen more!

Mercat
One of Dan's friends from high school is the chef for an amazing restaurant in the East Village called Mercat. It is Spanish food (as in Spain) and it is some of the best food I have ever had. We did a menu tasting and it was so much fun. We felt very special and important ;)

Me and Dan. We had so much fun going out on a date. It doesn't happen often enough. We also celebrated Dan's B-day while we were there...Happy b-day honey!

Dan and Patrick (Patrick went to Cornell with Dan and now lives in the city.) It was fun for Dan to catch up on old times.

Still Alive and Kicking!

Warning very long post ahead...proceed with caution!
I am a HUGE slacker and thank you everyone who let me know just how big of a slacker I am! I have been so bad a taking pictures lately and even worse about wanting to post them. Here are some very random pictures that we have taken during our little break from blogging.

PLAY TIME!
Jack has learned the joys of playing with his toys which makes for a messy basement but a very happy child.

Jack has a beautiful new smile that he flashes every time I whip out the camera.






POOR BABY :(
Jack had been battling a cold/ear infection for the past few weeks. I took him to the doctor and they put him on an antibiotics. After realizing that the ear infection was not gone they put him on another. Once again the new antibiotic did not work, lovely. So they decided to pull out their big guns and give Jack a very strong dose of antibiotics which is given in the form of a shot. Side not: I do not recommend this form of antibiotics! It is very painful and not worth it in my opinion!
The shot really upset Jack;s stomach and he ended up with the worse diaper rash! Ouch! Here is a picture of me trying to let his poor little bum air out. Thank goodness he is all better!

SPRING HAS SPRUNG!
If only the weather would cooperate! I love seeing the flowers bloom and going on walks with Jack but I sink into a depression every time the temperature drops. Sun please come and stay for a while, oh how we miss you!

OTHER NEWS
Jack is so fun right now and learning new things every day. Like how to climb out of his crib, or how to climb up on the stool and then on the counter, or how to wiggle his way out of his high chair even when he is strapped in, and opening the gate that is suppose to be child proof...just to name a few. YIKES I am in for it!

I finally got a gym membership and it has awesome day care so I can finally get in shape. YEAH!!

Dan's brother Alex got his mission call to Berlin, Germany. Congrats Al we are so proud and excited! We can't wait to come visit!

Dan and I are going to New York this weekend and Jack is staying home with a very trusted friend. We are so excited to go but I am sure we will miss Jack very much!
